All sharpening, even the very best, involves removing steel from the edges, but high quality sharpening will remove the absolute minimum amount of steel needed to create a new edge. Much more sharpening skill is required to remove a miniscule amount of steel than there is to take off too much, and unfortunately, once the steel is gone, it will never be the same again.
